My husband had this many moons ago at a restaurant and it has been a family favorite ever since. There are a couple reasons this moved into the category of family favorite. I’m not very adventurous in the kitchen and eggs are easy for even me to make. This comes in handy when all three kids need my attention while I’m making supper. Also, my kids will gladly eat spinach this way which makes it one serving of vegetables down the hatch with no fuss. That my friends is a win-win in my book. Lastly, we always seem to have the ingredients on hand to make it so it is an easy meal to throw together last minute. Say when mom forgot to menu plan that week or no longer feels like making the food she did menu plan for the week….not that that would EVER happen in my house!
Scrambled Eggs with Spinach and Cream Cheese
- 12 eggs
- 1/2 cup of milk
- 2 large handfuls of spinach
- 1 pkg of cream cheese
Make the scrambled eggs like you normally would. Towards the end mix in the spinach. Cook the spinach until it wilts. Cut the cream cheese into chunks and mix into the scrambled eggs. Let it sit until the cream cheese is slightly melted and gooey. Salt and pepper to taste. I’m trying to go dairy free so we have been using almond milk and take my portion out before the cream cheese gets added.
